Waipara Springs is a boutique vineyard and winery situated on the limestone rich soils of the Waipara valley, North Canterbury.
Hot summers and warm dry autumns with cool nights are some of the features that make Waipara ideal for producing top quality grapes for wine. The Pinot Noir grapes for this wine were grown in Waipara Springs own vineyards and the Dunnolly Vineyard, all in the limestone rich Waipara Valley. The fruit was hand harvested over several days then destemmed before fermentation on its skins in small vats. During fermentation the cap of skins was manually punched down three times daily to immerse the skins and ensure maximum extraction of colour, fruit tannin and flavour. The young red wine was pressed off the skins then allowed to mature for 9 months in seasoned French oak barriques.

While very approachable now, this wine will reward cellaring to at least 2008.
Made from fruit sourced from the Waipara Springs Estate vineyard, fermented and aged in French oak (20% new) for ten months. Bottled under Stelvin screwcap. Gorgeous colour, a vibrant cherry red, and a divine nose; at first it shows mainly fruit-driven characteristics, cherry and strawberry, but with a little time in the glass it reveals a complex chocolate notes, with deeper, darker, ripe black cherry and blackcurrant aromas. And there is a little oak still evident as well. A great vibrancy on the palate, with fresh, acid-framed summer fruits, a rounded, velvety texture and fine extract. A warm, persistent finish rounds it off. This is simply excellent.
